Gotta get this in before March be out! Here's the bread Uncle Don and Aunt Marie Pack enjoyed with us, along with Corned Beef & Cabbage, of course, the week of March 17th, when Marie turned a young 80. It's ridiculously easy and quick to make, and most delicious when fresh!

Irish Soda Bread

5-1/3 c. whole wheat flour
1 t. baking soda
1 t. salt
2 c. milk mixed with 2 T vinegar and let sit for 5-10 minutes

Preheat oven to 375-400 degrees.  Mix the dry ingredients well in a large bowl. Make a well in the center and add soured milk until you have a slack but not wet dough (water can be used at the end if necessary). Turn out on a floured surface and pat into a circle 1 1/2" thick.
Turn out on onto a greased baking sheet and use a large, wet knife to make a big, bold cross across the entire loaf.  Bake 40 minutes (test with skewer).
The Irish wrap the cool bread in a clean kitchen towel to keep fresh.
You can add a bit of sugar and some raisins for a treat.

Love, Grandma P.
